I must say this Spring has been one, crazy rollercoaster: travels, impressions, new people, crazy feelings, long days and even longer working hours, dedication to get in shape ( because, let’s be honest-round is not the best shape, hehe), neglected friends and new, life changing plans for the summer.. I have already shared couple of times my fitness power bars recipe with you guys but here is a slightly modified and updated version of the old muesli/ granola bars recipe. They say – third is a charm, right?

Made it to treat the family, friends and colleagues as made it way too many. But as a finger-lickin good ones – they were gone in a heartbeat! so tested, proven and approved even by picky eaters! (That’s why excuse the lack of the pictures – couldn’t fight off all the eaters!)

Experimental fitness dish cooking is my thing, but you already know that by now with all my Friday Fit Food posts. So once I week I post some of my experiments, fit recipes, modifications or new dishes I have come up to – all that’s good for the body and mind, doesn’t cost a fortune and are pretty easy to make – all in a name of diversification, clean food and to be a living proof that fit food doesn’t need to be boring or repetitive or plain.

Fall is asking for not only season garderobe change but also for local veggies and fruit season change. Even though apples are all year around fall has the best time to enjoy fresh and juicy apple just from the tree (or local farmer’s market) full with those vitamins and antioxidants, or in a different recipes – like baked apples.

I love apples in all forms and in all recipes and therefore experimenting with them always. Baked apple recipe is my latest obsession: fast, easy, healthy and delicious.

Whenever I got some free time I roll up sleeves and get on with cooking experiments. This time I tried a homemade tofu chips recipe. So easy, fast and soo good. Completely guilt free too!

Usually I always grab a copy of free Italian recipes books/magazines in supermarkets as I like to see what’s trending now in Italy as well as get some inspiration for my own experiments. This recipe is based on Esseulnga’s fall recipe catalogue I got there ( it’s a supermarket chain store). My eye caught section of recipes for vegans and vegetarians this fall and there was also many recipes with tofu.

As like tofu a lot but many people doesn’t ( including my husband) than decided to give a try to this tofu chips recipe with a slight modification to original one to see how it will be accepted. The result surprised me! And so will you!  Read More

Last Friday was all about cravings and desire to cook and create something different and delicious using particular ingredients, like black rice and pumpkin and so on. (The original post you can see here).  The best part of the last weekend was the one that followed – I actually did create and played around with 2 new fit recipes. The first one was with black rice and salmon.

So fast, easy and perfect for a fit weekend lunch that can be made by anyone and will take not more than 30 minutes to prepare everything. No real cooking skills required as well, so no excuses not trying yourself at home.

As here in Italy was a long bank holidays it was a perfect occasion not only to recreate and catch up with works but also experiment with some new recipes. This time I decided to try my hand in Sweet potato snack recipe and I must say it turned out even better than I hoped. 

Easy, fast delicious and perfect snack on-the-go. Fast to prepare and need just 4 main ingredients but still delicious and filling – so win-win situation to those who want something sweet but the same time fit and something that allows you to stick to the diet (especially helpful before Christmas holiday).

Every country has it’s own eating culture and Italy is definitely leading the list of the most exquisite, various and delicious cousins in the World. As I have been living in this food mecca more than 5 years already of course I have also picked up some Italian recipes, eating habits and tips that I use and incorporate in my everyday diet and dishes to make them more various, interesting and alternative. 

One of my all time favorite snack is friselle. Which is a a kind of durum wheat bread that is a specialty of Southern Italy, in particular the Puglia region.  They have the form of donuts, they are salty and are usually accompanied by tomatoes and eaten with some oil on them to soften them.

The recipe is really simple:

Instructions: Take friselle soak them in a water for couple of seconds. (I usually put them under a running water as it is potable) than put on plate and add fresh tomatoes cut in cubes, some fresh basil*  and some olive oil to soften them.

Ready to be served.

TIPS

  • In order not to make it to fall apart it must be enjoyed immediately as will not be able to hold it anymore.
  • I am growing basil on my balcony – perfect for so many dishes, especially Italian cuisine. Really easy plant to grow and take care of and doesn’t ask much attention. just watering regularly.)

This is my one of favorite Italian snacks that is fast to make, healthy and perfect between meals that I enjoy occasionally on Cheat days (usually Sundays once in while).

It’s Friday and it means it has been five days since I have been eating just liquid food. (Monday had a dental intervention therefore having couple of stitches in my mouth. Nothing serious – all in the name of health). Must say it has been quite hard not b able to chew anything and as been starving than had to adopt to my new conditions, that hopefully won’t last for long, and get innovative and blend everything. Basically having my own Will Can it blend show by bending everything. 

First days has been pretty rough so had been drinking just smoothies and some shakes but last days already get more advanced and start experimenting and already made some nice purees. (Tried kids meals and processed soups at beginning, but when realized how much added sugar and sodium is there I quickly decided to make my own dishes.
