As a wise lady Julia Child once said – ” a party without cake is just a meeting” and I couldn’t agree more especially when it comes to birthdays. However as much as we would love cake for that particular moment afterwards there is always a regret feeling, especially when we talk about carrot-walnut cake – my favorite.
Last weekend was my boyfriend’s brothers 25th birthday and as we are all clean eaters than had to find some alternative to have his birthday candles put in somewhere. After a short brainstorming I came up with a marvelous alternative how to have your piece of cake “clean and lean” and completely without a guilt. My solution was a protein cake – a Banana and Blueberry Protein cake.
Really fast, easy and oh, so delicious! here is how:
Ingredients:
1 cup oats (flakes or already blended – no difference)
3 medium, overly ripe bananas
4 egg whites
1/2 cup (vanilla or banana or plain) protein powder
170g non-fat Greek yogurt (I use Fage 0%)
2 tsp cinnamon
2 tsp natural sweetener (I use Nebtevia)
1 1/2 cups of blueberries
1 tsp baking powder
Method:
1. Preheat oven to 175C°
Blend all ingredients (except blueberries) together.
Make sure all the liquids are on the bottom) of the food processor.
Pour the batter in the baking form (I use a silicone one so no need for baking paper and forms, but can also use both of those for non sticking solution).
Place the blueberries (1 cup) on the batter.
Put it in the oven and bake for 30-40 minutes (depends on your oven). I had it for 40 minutes.
Take it out and leave it to rest for 5 minutes.
Decorate as you prefer – I made it with Fresh blueberries.
Voilà! You have a wonderful cake! Low calorie and so good!
