Finally Friday! After another crazy week is over and already looking forward tomorrow when I will be finally going to Expo 2015 (Milan). Real excited moreover as tomorrow there will be a huge parade in honor of a Japan day and as Hello Kitty is the ambassador of Japan pavilion and as I work for this lovely lady, than going to be there as well.
And as I already know that tomorrow there won’t be much time cooking a big, innovative and creative fit breakfasts and try new recipes than last night prepared a wonderful alternative instead of my regular rolled oats / oat meal or overnight oats – 2 ingredient oat cookies. Easy – peasy, fast and tastes great. Here is recipe you must try!
Ingredients:
- 3 medium ripe bananas
- 1 large bowl/ 2 cups of oats
- (raisins/almonds/dried fruit/berries/coconut/ seeds, etc). the possibilities are endless if you want to make some special twist to you 2 ingredient cookies and give a diverse flavor or just go creative.
for second half of the cookies I added handful of raisins – reminded of my mums homemade oat cookies with raisins (absolutely delicious).
Preparation:
Step 1.
Put on the frying pan oats and slightly roast them. Parallel warm up oven at 170°C (350°F).
Blend bananas and meanwhile let oats cool down a little and than add them to banana mass and lightly blend them so they stick together better.
Step 3.
Mix every thing together and with a tea spoon making round balls which place on a pan with a baking paper (I sprayed under a coconut oil to not allow cookies to stick to the pan and also it give a nice aroma to them).
I know does not look appetizing at this stage, but wait till you start rolling them into balls.
Step 4.
Put in a oven for 12-15 min.
15 minutes and we have a perfect breakfast meal for couple of days or a healthy snack that can be easily carried with you.
