How to make an alternative yet fit pancake recipe

Good Friday asks for some good weekend recipe, right? This time want to share with you, my latest, sweet experiment – apple pancakes! Perfect as a sweet treat or as a power breakfast to substitute those morning oats!

I must say this Spring has been one, crazy rollercoaster: travels, impressions, new people, crazy feelings, long days and even longer working hours, dedication to get in shape ( because, let’s be honest-round is not the best shape, hehe), neglected friends and new, life changing plans for the summer.. But hang in there, will keep you posted on that part too! But for now, let’s get back to my latest fit breakfast experiment – apple pancakes!

Incredibly easy, fit and healthy recipe that even a newbie will master and impress a foodie! 

To make it easier I have prepared visual step-by-step guide as well as a printable recipe. Just to keep that phone or laptop screen clean. Dont’t know how about you when cooking with recipes using your mobile devices, but I get them incredibly dirty. 

For this recipe, you will need as a basic ingredient an apple or 2. Depends on how many pancakes you wish to make.

Green and hard ones are the best ones to keep that shape.

For the mixture to dip the apple I used banana, oat flour, baking powder, an egg and almond milk and spices as cardamom, cinnamon, and vanilla and baked in coconut oil.

How to make your own apple pancakes

Once the texture is ready, you just dip the apple slices in them and bake as regular pancakes. I went on non-sticking coated pan for a couple of minutes per side till gets golden and then flipped. really fast! 

Serve with your favorite topping! Like get nasty and add some maple syrup!

Ingredients
  1. 1 big, green apple
  2. 1 ripe banana
  3. 1 teaspoon coconut oil
  4. 1 cup oats
  5. 1 egg
  6. 100 ml almond milk
  7. 1 teaspoon baking powder
Instructions
  1. Core apple and slice in not too thin slices
  2. Blend or mash banana
  3. Whisk egg and mix together with banana
  4. Mix all ingredients well together as last adding milk
  5. Pre-heat pan and put on it apple slices dipped in the dough
  6. Cook 2 min per side on a small heat or till golden brown, flip over and repeat.
  7. Enjoy warm!
Notes
  1. Can add any topping you prefer! tastes wonderful with maple syrup.
