Good Friday asks for some good weekend recipe, right? This time want to share with you, my latest, sweet experiment – apple pancakes! Perfect as a sweet treat or as a power breakfast to substitute those morning oats!

I must say this Spring has been one, crazy rollercoaster: travels, impressions, new people, crazy feelings, long days and even longer working hours, dedication to get in shape ( because, let’s be honest-round is not the best shape, hehe), neglected friends and new, life changing plans for the summer.. Have you ever wonder how does that alternative, vegetarian pizza base tastes but was kind a scared to try yourself? Well don’t worry! I experimented on myself! Must tell you – tastes absolutely great! and would never even tell that it is made from cauliflower.

I decided to give a try to this alternative pizza as a) cannot eat any bread products nor any yeast products so pizza is out of a question. (Living in Italy does not help you to resist the temptation). So I decided to give a try to this vegetarian pizza base myself.

All you need is 1 cauliflower, 100g almonds, an egg, some 100 g cheese, food processor and some patience. The last one you will need a lot.

Ever now and then a girl just needs to have her blissful getaway to recharge her batteries, wind her head and just enjoy the peace and quiet. Especially after having the most stressful summer of your life: long working hours and business travels, dealing with a distance wedding organization, which happens to be your own wedding. Needless to say that after all this is over you desperately need for some peace and quite to return to being just plain & sane you.  My inner self was saved by a sun catching and Ionian coast exploring in Sicily.

However last years been noticing that Milan is improving more also on healthy food trends and following the global trend for urban cities offering bigger and wider healthy lunch selection. What makes foodies, vegans and healthy eaters happier and life easier ( talking of leaving that pre-packed salad at home and going out with friends for lunch).

This time wanted to share with you one of my favorite, healthy hot-spots of Milan – That’s Vapore. This place is truly green (in thinking and interior) offering a nice concept lunches served in baskets that are freshly prepared every day. Oh, hello sunny Monday! Another weekend over and another work week is ahead of us with new aims, goals and plans, like, for example, getting rid of the toxins! we all, of course, have heard about toxins (A  poisonous substance produced within living cells or organisms that can be small molecules, peptides, or proteins that are capable of causing disease on contact with or absorption by body tissues interacting with biological macromolecules. Ref. Wikipedia). In other words toxins can badly affect your immune system  which are taken by environment and mostly by the food we eat causing diseases, allergies, sickness and for sever cases even death. 

There is no really a good way to avoid taking toxins by environment or pollution or people around you, but there is definitely a way to avoid them coming to your plate.

Me & My Beau

Today is first day in 7 days I am able to sit up straight an actually sit to the computer and do something. Been sick as a monkey for last week and basically all I did was staying in bed.

Actually cannot really recall last time I had so high fever, muscle pain, headache and such a bad smokers cough, if ever had one so felt even worse as not used to be set still for such a long time especially when I have so many plans and things to do. However not everything always depends on us and guess some higher power wanted me just to slow down and give my body and mind a break for a week…and I just had to let it. No gym, no workout, no working, no nothing – just bed, medicine and relax.

Since I was a kid Sunday’s for me have always associated with the smell of pancakes coming from the kitchen where mom is baking them! you just now that the day will be just amazing after eating a hot pancake covered with a homemade strawberry or apple jam – just sweet, sweet happiness!

But since I have turned to (the dark side) healthier cooking and lifestyle than I decided to improve also my pancakes recipe with some healthier and less caloric ingredients, so I tried my hand in baking Protein pancakes with no flour, instead using banana!
 
Must say the result is De-Li-Ci-Ous!Just finger-lickin’! Moreover it is so easy and fast!Give it a try!  RECIPE below!
..since I tried these – I have never went back to the old ones as there is no big difference in taste, well maybe there is – they taste even better! a
actually so good that you even want to play with you food…
