Recipe: Hulk Protein Bread

Last day, guys! Last day before heading for vacations so it means just one thing – happiness is in the air (along with the smog, humidity and incredible heated Milan air – yes, still melting feeling), but happiness is taking over everything else leaving secondary! My Friday morning started wonderful as had for breakfast a Hulk protein bread I made last night! and I must say – it turned out yummy so was waiting since last night to be able to try it!

As it is so good, than it is a must to share the recipe with you guys! Originally based to MissK_J6 recipe (check it out here this girl has wonderful clean recipes and ideas! ), but as I ran out of all kind of coconuts that’s needed in her recipe than just went improvising and turned out wonderful, healthy and low on calories!

Hulk Protein bread recipe:

Ingredients:

  • 1 cup* oats
    1 medium overly ripe banana
    1 avocado
    1 cup fresh spinach
    4 eggs whites (or whole eggs)
    1 ½ scoop vanilla protein powder (I use Impact whey protein (Natural Vanilla) from My Protein)
    2 tbsp Greek yogurt (used Fage 0%)
    2 tbsp melted coconut oil extra virgin
    2 tsp ground cinnamon
    1 tsp baking powder
    ½ tsp baking soda
    1tbsp chia seeds

* Cup – a regular coffee mug

Method

Step 1. Preheat oven to 185° C and grease a loaf tin with an olive oil (or lay in a baking paper).

Step 2. Blend all the ingredients (make sure the liquids are in the bottom of the blender).

My best friend is a Cuisinart food processor that grinds and chops everything, even though should have calculated slightly smaller portions as I almost had to use force to squeeze in spinach leaves, but I made it and managed to blend everything.

Step 3. Bake for 40- 45 mins (depends on your oven), at 20 mins cover the top with an aluminium foil. Once ready take it out and leave in tin for 5 minutes to rest before cooling on a wire cooling rack.
